Homemade Sprinkles
Serves: 2.5-3 cups

Ingredients
  • 3 tablespoons meringue powder
  • 4 cups powdered sugar
  • Pinch of salt
  • ½ teaspoon vanilla
  • 5 tablespoons water (to start, you may need more)
  • Food coloring
Instructions
  1. Melissa Wright:
  2. Arrange 4-5 parchment sheets on a table or counter.
  3. In a mixing bowl, whisk together meringue powder, powdered sugar, and salt until well combined.
  4. Add  vanilla and 3 tablespoons water and beat together with a hand mixer until well combined. Add addition water, one tablespoon at a time, until a thick paste is formed. It should be be able to be piped but thick enough to hold its shape.
  5. Divide mixture into small bowls (depending on how many colors you want to make), and add food coloring to get desired color. Add each color to a piping bag, and snip the very end to make a small opening (the desired diameter of your sprinkles). Pipe mixture into many long, thin lines on the parchment, until all colors are used up. Allow to dry 4 hours at least, or ideally, overnight. Once dry, cut or break dried strands into desired length of sprinkles. Store in an air tight container.
