Strawberry Torte

Ingredients
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 pound strawberries, hulled
  • 2 tablespoons brown sugar
Instructions
  1. Preheat oven to 350 degrees F. Spray a 9 or 10 inch springform pan with cooking spray.
  2. In a large bowl, cream together the sugar and butter until smooth and pale, about 3-4 minutes. Beat in eggs and vanilla until well combined. Add flour, baking powder, and salt. Mix until just combined.
  3. Spoon batter into prepared pan, spreading evenly. Arrange strawberries, hulled side down, over top of batter, fitting as many as you can in a single layer. Sprinkle top of torte with brown sugar.
  4. Bake in preheated oven for 50-60 minutes cooked through completely and top is golden brown. Remove and let cool before serving.
