Eggless (and Vegan) Vanilla Cake

Ingredients
  • 1½ cups all purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon white vinegar
  • 5 tablespoons olive oil
  • 1 tablespoon vanilla extract
  • 1 cup almond milk
Instructions
  1. Preheat oven to 350 degrees F. Spray a 8x8 inch square baking pan with non-stick cooking spray.
  2. Whisk flour, sugars, baking soda, and salt together in a large mixing bowl. Add vanilla, olive oil, and then vinegar on to the top of the wet ingredients, then pour almond milk over the top. Stir together until well combined.
  3. Pour into prepared pan. Bake in preheated oven for about 20-25 minutes, until a cooked through and toothpick inserted in the center comes out clean. Remove from oven and let cool before serving or frosting.
