Black Forest Protein Pancakes

Ingredients
  • 2 cups Kodiak Cakes Power Cakes Buttermilk Flapjack Mix (link)
  • ¼ cup cocoa powder
  • ½ teaspoon salt
  • 1 cup almond milk
  • ½ cup greek yogurt
  • 1 teaspoon vanilla
  • 2 eggs
  • ½ cup heavy cream
  • 1 tablespoons powdered sugar
  • 1 recipe cherry compote (click here for recipe)
Instructions
  1. Preheat waffle iron. In a mixing bowl, stir together cocoa pancake mix, cocoa powder, and salt. Add milk, greek yogurt, vanilla, and eggs and stir until just combined.
  2. Cook waffles according to waffle maker instructions. While waffles cook, add heavy cream and powdered sugar to a mixing bowl and beat until soft peak form.
  3. Top waffles with cherry compote and a dollop of whipped cream.
Notes
*You could sub a homemade or other store-bought waffle mix, but you may need to adjust the amount of liquid or mix slightly to get the desired consistency.
