Grapefruit, Blood Orange, Avocado, and Butter Lettuce Salad with Citrus Vinaigrette
 
Ingredients
  • Citrus Dressing:
  • Zest and juice of 1 small to medium sized orange
  • 2 Tablespoons honey
  • 3 Tablespoons champagne vinegar
  • 6 Tablespoons olive oil
  • Salt and freshly ground pepper, to taste
  • Salad:
  • 1 large head butter lettuce, washed and torn into pieces
  • 1 large grapefruit, peeled and sliced
  • 2 blood oranges, peeled and sliced
  • 2 avocados, sliced
  • Salt and freshly ground pepper
Instructions
  1. For the dressing: whisk together orange zest and juice, honey, and champagne vinegar. While whisking, stream in olive oil. Season with salt and pepper. Set aside.
  2. For the salad: In a large serving bowl, place a layer of butter lettuce. Season with a little salt and pepper. Top with some of the grapefruit, blood orange, and avocado slices. Add another layer of lettuce, and then continue layering. Dress right before serving.
