Sweet Skillet Corn Bread
 
Ingredients
  • ½ cup butter
  • ½ cup white sugar
  • 2 eggs
  • 1 cup buttermilk
  • ½ teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 375 degrees F.
  2. Melt butter over medium heat in an 8 inch cast iron skillet. Remove from heat and stir in sugar. Add eggs and whisk until well blended. Combine buttermilk with baking soda and stir into butter mixture. Stir in cornmeal, flour, and salt until blended. The mixture may still have a few small lumps remaining.
  3. Place skillet in preheated oven. Bake for 25-35 minutes, or just until a toothpick inserted in the center comes out clean.
